Chaat Masala

Serves 4 to 6 vegan

Chaat Masala

Chaat Masala hails from the bustling street food stalls of India, where it's a staple seasoning in myriad quick bites. It's a spice mix that's made its way into home kitchens, adapted lovingly by family cooks who know its power to transform the simplest ingredients into something extraordinary. Here, it’s crafted with care, each ingredient measured by intuition rather than scales, capturing the spirit of Indian chaat culture.

A sprinkle of Chaat Masala brings an electrifying tanginess that dances on your palate, a symphony of sour, salty, and spicy notes. The amchur lends a tartness that’s balanced by the earthy warmth of roasted cumin and the sulfurous punch of black salt. The result is an invigorating mix that enlivens anything from fresh fruits to crisp pakoras, making it a versatile and cherished addition to any table.

Ingredients

  • 2 tbspamchur
  • 1 tbsproasted cumin
  • 1 tbspblack salt
  • 1 tspblack pepper
  • 1 tspchili powder
  • 1 tspasafoetida
  • 1 tspfine sea salt

Method

  1. Begin by setting a small, dry skillet over medium heat. Add 1 tbsp of roasted cumin seeds to the skillet. Toast them gently, stirring occasionally, until they release a warm, nutty aroma. This should take a few minutes, and you'll notice the seeds darkening slightly in color.
  2. Once the cumin seeds are fragrant, remove the skillet from the heat and transfer the seeds to a plate to cool completely. This cooling step is crucial to prevent the spices from clumping when ground.
  3. Once the cumin seeds have cooled, place them in a spice grinder or mortar and pestle. Grind them into a fine powder. If using a mortar and pestle, apply steady pressure and rotate the pestle to achieve an even grind.
  4. In a mixing bowl, combine the ground cumin with 2 tbsp of amchur (dried mango powder), 1 tbsp of black salt, 1 tsp of black pepper, 1 tsp of chili powder, 1 tsp of asafoetida, and 1 tsp of fine sea salt. Stir the mixture thoroughly to ensure all the spices are evenly distributed.
  5. Transfer the mixed Chaat Masala into an airtight container. Store it in a cool, dark place to preserve its vibrant flavors. This spice blend is now ready to be used in your favorite chaat recipes, adding a tangy and spicy kick.
