Especias para Chorizo Casero

Especias para Chorizo Casero brings the heart of Spain into your kitchen with its robust blend of spices. This seasoning is the soul of Spanish chorizo, a staple often celebrated in the vibrant markets of La Rioja and the bustling streets of Salamanca. Traditionally mixed into pork to create sausages that are enjoyed year-round, this blend also finds its place in the warm embrace of autumn stews and the bustling tables of weekend gatherings.

This seasoning captures the bold sweetness of pimentón de la Vera, balanced by garlic, oregano, and coriander's earthiness, offering a taste of Spain when used in dishes like sizzling potatoes or homemade chorizo.

Ingredients

  • 6 tbspsweet pimentón de la Vera
  • 2 tbsphot pimentón picante
  • 2 tbspgarlic powder
  • 1 tbspdried oregano
  • 2 tspfreshly ground black pepper
  • 1 tspground coriander
  • 2 tbspfine sea salt

Method

  1. Grind 2 teaspoons of black pepper and 1 teaspoon of ground coriander using a mortar and pestle or a spice grinder. Ensure that the spices are finely ground to release their essential oils, which will enhance the flavor of the blend. Allow the ground spices to cool completely to prevent the heat from affecting the delicate flavors of the pimentón.
  2. In a large mixing bowl, combine 6 tablespoons of sweet pimentón de la Vera and 2 tablespoons of hot pimentón picante. Add 2 tablespoons of garlic powder, 1 tablespoon of dried oregano, the cooled black pepper and coriander, and 2 tablespoons of fine sea salt. Use a whisk to thoroughly blend these ingredients until the mixture achieves a uniform deep red color, indicating that the spices are evenly distributed.
  3. To season pork for chorizo, use about three tablespoons of this spice blend per kilo of coarsely ground pork. Add a splash of white wine to the mixture to help the spices adhere to the meat and enhance the flavor. Mix the spices and wine into the pork thoroughly, ensuring that every piece is coated. Allow the seasoned pork to rest overnight in the refrigerator to let the flavors meld before proceeding to stuff casings or fry the meat.
  4. Transfer the remaining spice blend into an airtight jar to preserve its freshness and potency. This versatile seasoning can be used to enhance the flavor of potatoes, chickpeas, and roast chicken, providing a taste of chorizo even when the sausage itself is not available. Store the jar in a cool, dark place to maintain the quality of the spices.
