Haleem Masala Blend

Haleem Masala Blend is a hallmark of the sacred month of Muharram, embodying the warmth and comfort shared in Pakistani homes during this time. Traditionally, the kitchens hum with activity as families prepare this aromatic mix to infuse their slow-cooked haleem with layers of robust flavor. Each family might have its own take on the blend, passed down through generations, ensuring the communal meal is as unique as it is comforting.

When you taste this masala blend, the earthy warmth of coriander and cumin greets you first, followed by a gentle heat from red chili, all rounded by the depth of garam masala and turmeric. It's a spice mix that transforms the humble haleem into a rich, savory dish, perfect for sharing at a table set for togetherness.

Ingredients

  • 2 tbspcoriander
  • 1 tbspcumin
  • 1 tbspred chili
  • 1 tspgaram masala
  • 1 tspturmeric
  • 1 tspfine sea salt

Method

  1. Place a dry skillet over medium heat and add 2 tablespoons of coriander seeds and 1 tablespoon of cumin seeds. Toast the spices, stirring continuously with a wooden spoon to ensure even heating. You'll know they're ready when they release a warm, nutty aroma and the seeds take on a slightly darker hue.
  2. Remove the skillet from the heat and transfer the toasted spices to a plate to cool completely. This cooling step is crucial to prevent the spices from releasing moisture when ground, which could lead to clumping.
  3. Once the spices have cooled, use a spice grinder or mortar and pestle to grind them into a fine powder. Aim for a uniform texture to ensure the blend mixes evenly with other ingredients later.
  4. Transfer the ground spices to a small bowl and add 1 tablespoon of red chili powder, 1 teaspoon of garam masala, 1 teaspoon of turmeric, and 1 teaspoon of fine sea salt. Stir the mixture thoroughly with a spoon until all the ingredients are well combined, resulting in a vibrant, aromatic blend.
  5. Store the Haleem Masala Blend in an airtight container, such as a glass jar with a tight-fitting lid. Place the container in a cool, dark place, like a pantry or cupboard, to preserve the potency and flavor of the spices for future use.
