Indian Chili Salt is a vibrant pantry blend that finds its place on tables across India, adding a bold kick to everyday meals. The blend offers a robust taste with the heat of chili flakes, balanced by the earthiness of cumin and the sharpness of garlic powder. Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 3 tablespoons of chili flakes and 1 teaspoon of cumin to the skillet. Stir continuously with a wooden spoon to ensure even toasting. You'll know the spices are ready when the chili flakes become slightly darker and the cumin releases a warm, nutty aroma.
  2. Remove the skillet from heat and immediately transfer the toasted spices to a large plate to cool. This prevents further cooking and potential burning from residual heat in the pan. Let them cool completely to room temperature, which is crucial for maintaining the integrity of the flavors when grinding.
  3. Once cooled, combine the toasted chili flakes and cumin with 2 tablespoons of fine sea salt and 1 tablespoon of garlic powder in a spice grinder or mortar and pestle. Grind the mixture until it reaches a uniform texture, ensuring the salt and spices are evenly distributed throughout.
  4. Transfer the Indian Chili Salt blend to an airtight container. Choose a jar or container that seals well to protect the blend from moisture and air, which can degrade its potency.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, to preserve the flavors. Light and heat can diminish the aroma and taste of the spices over time.
