Mix per Pesce e Carne

Mix per Pesce e Carne is a quintessential Sicilian blend, capturing the island's relaxed yet flavorful approach to cooking. In Sicily, this mix is a staple, used generously on both seafood and meat, embodying the essence of home-cooked meals where olive oil flows freely and salt is always added by feel, not measure. This is not a dish for special occasions but a beloved everyday companion that finds its place in kitchens where recipes are lived, not read.

Expect a robust, aromatic burst from the dried oregano and basil, with a gentle heat from red pepper flakes that complements both fish and meat beautifully. The garlic powder adds depth, while fine sea salt ties the flavors together, creating a harmonious balance. Each bite reflects the simplicity and authenticity of Sicilian home cooking, where the quality of ingredients and the ease of preparation shine through.

Ingredients

  • 2 tbspdried oregano
  • 1 tbspdried basil
  • 1 tbspgarlic powder
  • 1 tspred pepper flakes
  • 1 tspfine sea salt

Method

  1. Place a dry skillet over medium heat. Add 2 tablespoons of dried oregano and 1 tablespoon of dried basil to the skillet. Stir them continuously with a wooden spoon to prevent burning. Toast until the herbs release a fragrant aroma, which should take about 2 to 3 minutes.
  2. Remove the skillet from the heat and allow the toasted herbs to cool completely. This cooling step is crucial to prevent the herbs from becoming soggy when stored.
  3. Once cooled, transfer the herbs to a mortar and pestle or a spice grinder. Grind or crumble them to a coarse texture, ensuring that the herbs are broken down but not turned into a fine powder.
  4. In a mixing bowl, combine the ground herbs with 1 tablespoon of garlic powder, 1 teaspoon of red pepper flakes, and 1 teaspoon of fine sea salt. Stir the mixture well to ensure even distribution of the flavors.
  5. Transfer the spice mix to an airtight container. Store it in a cool, dark place to maintain its potency. Refresh the jar every few months to keep the flavors vibrant and lively.
