Ingredients

  • 200 mlextra virgin olive oil
  • 4dried Calabrian chiles — crushed

Method

  1. Place a small, dry skillet over medium heat. Add the 4 dried Calabrian chiles to the skillet. Toast them gently, shaking the skillet frequently to keep them moving. You'll know they're ready when they become fragrant and their color deepens slightly, but be careful not to let them burn.
  2. Remove the skillet from the heat and let the chiles cool completely. This cooling step is crucial to ensure that they grind or crumble properly without releasing too much moisture, which can affect the texture of the finished product.
