Pho Spice Blend

Pho Spice Blend is a fragrant cornerstone of Vietnamese cooking, bringing the essence of a bustling pho shop into the home kitchen. Traditionally, this blend is crafted with intuition, where salt is measured by feel and fat enriches the broth. This home version captures that spirit, offering a family recipe passed through generations, written down with care to ensure each bowl of pho resonates with the warmth of communal dining.

Expect a symphony of flavors where the sweet licorice notes of star anise meet the warm spiciness of cinnamon and cloves. Coriander seeds add a citrusy brightness, while fine sea salt ties the blend together with precision. This spice mix should evoke the comfort of a steaming bowl of pho, inviting you to savor each spoonful with the satisfaction of a meal shared among loved ones.

Ingredients

  • 2star anise
  • 1cinnamon stick
  • 4cloves
  • 1 tspcoriander seeds
  • 1 tspfine sea salt

Method

  1. Place a dry skillet over medium heat and add 2 star anise, 1 cinnamon stick, 4 cloves, and 1 teaspoon of coriander seeds. Toast the spices, shaking the skillet occasionally to ensure even heating. You'll know they're ready when the spices release a warm, aromatic fragrance and the coriander seeds start to pop slightly.
  2. Remove the skillet from the heat and transfer the toasted spices to a plate to cool completely. This cooling step is crucial to prevent any residual heat from continuing to cook the spices, which could lead to a bitter taste.
  3. Once the spices are completely cool, use a spice grinder or mortar and pestle to grind them into a fine powder. If using a mortar and pestle, work in small batches to ensure an even grind.
  4. Transfer the ground spice blend to a bowl and add 1 teaspoon of fine sea salt. Stir the mixture thoroughly to ensure the salt is evenly distributed throughout the spice blend.
  5. Store the Pho Spice Blend in an airtight container, such as a glass jar with a tight-fitting lid. Keep it in a cool, dark place to preserve its flavor and aroma. This blend will enhance your pho broth, bringing authentic Vietnamese flavors to your home-cooked meals.
