Pilav Spice Mix

Ingredients

  • 2 tbspallspice
  • 1 tbspcinnamon — sticks broken
  • 4bay leaves
  • 1 tspblack peppercorns
  • 1 tspfine sea salt

Method

  1. Place a small, dry skillet over medium heat. Add 2 tablespoons of allspice, 1 tablespoon of cinnamon, 4 bay leaves, and 1 teaspoon of black peppercorns to the skillet. Stir the spices gently with a wooden spoon to ensure even toasting. Watch for the spices to release a warm, aromatic fragrance and the bay leaves to become slightly brittle, indicating they are toasted.
  2. Remove the skillet from the heat and allow the spices to cool completely in the pan. This cooling step is crucial to prevent moisture from forming when grinding, which can affect the texture and shelf life of the spice mix.
  3. Once cooled, transfer the toasted spices to a spice grinder or a mortar and pestle. Add 1 teaspoon of fine sea salt to the mixture. Grind the spices until they form a uniform, fine powder, ensuring the bay leaves are fully broken down and integrated into the mix.
  4. Transfer the ground spice mix into an airtight container, such as a glass jar with a tight-fitting lid. Store the jar in a cool, dark place, like a pantry or cupboard, to protect the spices from light and heat, which can degrade their flavor.
