Red Curry Paste Mix

Red Curry Paste Mix is a staple in Thai home kitchens, particularly in the central regions where cooks have perfected the art of balancing its potent flavors. This home-style version is often prepared without strict measurements, relying instead on the cook's intuition and a generous hand with fat. It's a flexible component that can be adjusted to suit the family's palate, making it a cherished element on shared tables.

The paste hits the palate with a vibrant burst of red chili heat, tempered by the citrusy notes of lemongrass and the earthy warmth of galangal. The subtle umami from shrimp paste powder and a precise touch of sea salt bind these flavors together. It's a versatile base that transforms any dish into a rich, aromatic experience, embodying the essence of Thai home cooking.

Ingredients

  • 2 tbspred chili powder
  • 1 tbsplemongrass
  • 1 tbspgalangal
  • 1 tspshrimp paste powder
  • 1 tspfine sea salt

Method

  1. Begin by placing a dry skillet over medium heat. Add 2 tablespoons of red chili powder to the skillet. Stir gently and continuously to ensure even toasting. You'll know it's ready when the aroma becomes rich and slightly smoky, and the color deepens slightly.
  2. Remove the skillet from the heat and allow the chili powder to cool completely. This cooling step is crucial to prevent any residual heat from affecting the texture when you grind or stir it in the next step.
  3. Once cooled, transfer the toasted chili powder to a mortar and pestle or a spice grinder. Grind it until it reaches a fine consistency, ensuring there are no coarse bits left. This step helps to release the essential oils and deepen the flavor.
  4. In a mixing bowl, combine the ground chili powder with 1 tablespoon of finely chopped lemongrass, 1 tablespoon of finely chopped galangal, 1 teaspoon of shrimp paste powder, and 1 teaspoon of fine sea salt. Stir the mixture thoroughly to ensure all the ingredients are evenly distributed.
  5. Transfer the mixed curry paste into an airtight container. Store it in a cool, dark place to preserve its vibrant flavor and color. This storage method helps maintain the freshness and potency of the paste for future use.
