Matambre a la Pizza

Matambre a la Pizza is a creative twist on the classic Argentine asado, where a cut of beef known as matambre is transformed into a pizza-like delight. Traditionally prepared during weekend gatherings or festive occasions, this dish showcases the Argentine passion for grilling and communal dining. It is a dynamic centerpiece at the asado, offering a playful nod to pizza with its tomato sauce and melted mozzarella topping.

Ingredients

  • 1matambre, aproximadamente 1.2 kilogramos
  • 200 mililitrossalsa de tomate
  • 250 gramosmozzarella, en rodajas
  • al gustoorégano
  • al gustosal

Method

  1. Precaliente su parrilla a fuego medio-alto. Coloque el matambre, aproximadamente 1.2 kilogramos, en la parrilla con el lado de la grasa hacia abajo. Espolvoree sal al gusto de manera uniforme sobre la superficie. Ase el matambre, volteándolo ocasionalmente, hasta que esté casi listo. La carne debe estar dorada por fuera y ligeramente firme al tacto, indicando que está casi cocida.
  2. Una vez que el matambre esté casi listo, extienda 200 mililitros de salsa de tomate uniformemente sobre el lado superior. Use una cuchara para asegurarse de que la salsa cubra toda la superficie, llegando a los bordes para un sabor completo.
  3. Coloque 250 gramos de mozzarella en rodajas sobre la salsa de tomate. Distribuya las rodajas uniformemente para que el queso se derrita de manera uniforme. Espolvoree orégano al gusto sobre el queso para un acabado aromático.
  4. Cubra la parrilla o mueva el matambre a calor indirecto. Esto permitirá que el queso se derrita sin quemar la parte inferior de la carne. El queso debe estar completamente derretido y ligeramente burbujeante, con un toque de color dorado en los bordes.
  5. Retire el matambre de la parrilla y déjelo reposar por un minuto. Este breve período de reposo permite que los jugos se redistribuyan dentro de la carne, mejorando su ternura.
