Serves 4 to 6 vegetarian

Bhel Puri

Bhel Puri is a beloved street food that hails from the bustling beaches of Mumbai, where vendors expertly mix ingredients by hand, creating a symphony of textures and flavors. At home, it's a dish that comes together with a casual flair, often prepared for a quick snack or a light meal shared with family and friends. The charm of Bhel Puri lies in its simplicity and the ease with which it brings people together around a table.

This dish delights with its vibrant mix of puffed rice, juicy tomatoes, and crisp onions, all tied together by the tangy-sweet notes of tamarind chutney. A generous sprinkle of sev adds a satisfying crunch, while a handful of fresh cilantro brightens each bite. The salt is adjusted to taste, ensuring every mouthful is perfectly balanced, capturing the essence of Mumbai's spirited culinary scene.

Ingredients

  • 4 cupspuffed rice
  • 2onions
  • 2tomatoes
  • 4 tbsptamarind chutney
  • 2 tbspsev
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Start by finely chopping 2 onions and 2 tomatoes, ensuring they are diced evenly for a consistent texture in the Bhel Puri. Roughly chop a handful of cilantro, keeping the leaves and tender stems. Set these aside in separate bowls, as they will be added at different stages.
  2. In a large mixing bowl, add 4 cups of puffed rice. This will be the base of your Bhel Puri, providing a light and airy texture. Ensure the puffed rice is fresh and crisp, as it should provide a crunchy contrast to the other ingredients.
  3. Add the chopped onions and tomatoes to the puffed rice. Mix gently with your hands or a large spoon to combine, taking care not to crush the puffed rice. The onions should add a sharp bite, while the tomatoes contribute juiciness.
  4. Pour 4 tablespoons of tamarind chutney over the mixture. The chutney should be evenly distributed to ensure each bite has a balance of tangy and sweet flavors. Mix thoroughly until the chutney coats the puffed rice and vegetables evenly.
  5. Sprinkle 2 tablespoons of sev over the mixture. Sev adds a crispy texture and a hint of spiciness. Toss gently to incorporate, making sure the sev is well distributed throughout the Bhel Puri.
  6. Add the chopped cilantro to the bowl, mixing it in to add a fresh, herbal note. The cilantro should be visible throughout the mixture, adding both flavor and color.
  7. Season the Bhel Puri with fine sea salt to taste. Start with a small amount and adjust as needed, mixing well after each addition. The salt should enhance the flavors without overpowering them.
  8. Serve the Bhel Puri immediately to enjoy the contrast of textures and flavors at their peak. The puffed rice should remain crisp, and the dish should be vibrant and flavorful, perfect for sharing.
