Method

  1. Start by preparing the tomatoes. Rinse the 4 ripe tomatoes under cold water, then pat them dry with a clean kitchen towel. Use a sharp knife to dice the tomatoes into small, uniform pieces, ensuring they are small enough to sit comfortably on the baguette slices. Transfer the diced tomatoes to a medium-sized mixing bowl.
  2. Peel the 2 cloves of garlic and mince them finely. Add the minced garlic to the bowl with the tomatoes. This will infuse the tomatoes with a subtle, aromatic flavor that complements their natural sweetness.
  3. Tear a handful of fresh basil leaves into small pieces and add them to the tomato mixture. The basil should be fragrant and vibrant, adding a fresh, herbaceous note to the dish. Drizzle 2 tablespoons of extra virgin olive oil over the mixture and season with fine sea salt to taste. Gently toss everything together until the tomatoes are well-coated and the flavors are evenly distributed.
  4. Slice the baguette into pieces about 1/2 inch thick. Arrange the slices on a baking sheet in a single layer. Brush the top of each slice with the remaining 2 tablespoons of extra virgin olive oil to ensure they toast evenly and develop a golden, crispy texture.
  5. Preheat your oven to 400°F (200°C). Place the baking sheet in the oven and toast the baguette slices until they are golden brown and crispy on the edges. This should take about 5 to 7 minutes, but keep an eye on them to prevent burning. They are ready when they are firm to the touch and lightly browned.
  6. Once the baguette slices are toasted, remove them from the oven and let them cool slightly on the baking sheet. This will make them easier to handle and prevent the tomato mixture from making them soggy.
  7. To assemble, use a spoon to generously top each baguette slice with the tomato mixture. Ensure each piece has a good balance of tomatoes, garlic, and basil.
