Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing each component. Rinse 150 g of rice under cold water until the water runs clear, then set it aside to drain. Dice 1 onion finely and chop your choice of fresh herbs, such as cilantro or parsley, to yield about 2 tablespoons. Carefully cut the tops off 4 peppers or tomatoes and remove the seeds and membranes, creating a hollow space for stuffing. Set these aside on a plate.
  2. Heat 80 ml of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced onion and sauté until it becomes translucent and fragrant, about 5 minutes. Stir in the drained rice, allowing it to absorb the flavors from the onion and oil for another 2 minutes. Add a pinch of fine sea salt and black pepper to taste, stirring to combine.
  3. Pour enough water into the skillet to just cover the rice, then bring it to a gentle simmer. Cover the skillet with a lid and reduce the heat to low. Cook until the rice is tender and has absorbed the water, stirring occasionally to prevent sticking. The rice should be soft and slightly sticky, with a glossy appearance.
  4. Once the rice is cooked, remove the skillet from heat and stir in the chopped herbs. Taste and adjust seasoning with more salt and pepper if needed. Allow the mixture to cool slightly, making it easier to handle when stuffing the vegetables.
  5. Preheat your oven to 180°C (350°F). Stuff each hollowed pepper or tomato with the rice mixture, pressing down gently to ensure they are well-filled. Place the stuffed vegetables in a baking dish, standing them upright so the filling stays intact.
  6. Drizzle a little more olive oil over the stuffed vegetables to keep them moist during baking. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the vegetables are tender and the tops are slightly golden. The peppers or tomatoes should be soft to the touch but still hold their shape.
  7. Remove the baking dish from the oven and let the stuffed vegetables rest for a few minutes before serving. Finish with a sprinkle of additional fresh herbs for a burst of color and flavor. Serve immediately, allowing everyone to enjoy the warmth and aroma of this comforting dish.
