Choritos a la Chalaca

Serves 4 to 6 seafood

Choritos a la Chalaca

Choritos a la Chalaca hails from Callao, where the sea's bounty meets the vibrant spirit of local kitchens. This dish is a staple at family gatherings and festive tables, especially when fresh mussels are in abundance. Callao cooks embrace a hands-on approach, judging salt by feel and using fat with generosity to enhance the flavors, making it a true reflection of the region's culinary ethos.

Each bite of this dish brings the ocean to your palate, with mussels mingling seamlessly with the sharpness of red onion and the bright acidity of lime juice. The aji limo adds a playful heat, while cilantro lends a fresh, herbal finish. It's a dish meant for sharing, inviting everyone at the table to indulge in its bold, coastal flavors.

Ingredients

  • 24mussels
  • 1red onion — diced
  • 2tomatoes
  • 2 tbspaji limo
  • 3 tbsplime juice
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Begin by thoroughly cleaning the 24 mussels under cold running water, scrubbing the shells with a brush to remove any debris. Discard any mussels that are cracked or remain open after a gentle tap. Set them aside in a bowl.
  2. Finely dice 1 red onion and 2 tomatoes, ensuring the pieces are small and uniform to blend well with the mussels. Chop a handful of cilantro finely, and set these ingredients aside separately. Mince 2 tablespoons of aji limo, taking care to remove the seeds if you prefer less heat.
  3. In a large pot, add enough water to cover the bottom by about an inch and bring it to a boil over high heat. Once boiling, add the mussels and cover the pot with a lid. Steam the mussels for about 3-5 minutes, or until they open up. As soon as they open, remove the pot from the heat and transfer the mussels to a plate to cool slightly.
  4. While the mussels are cooling, in a mixing bowl, combine the diced red onion, tomatoes, minced aji limo, and chopped cilantro. Add 3 tablespoons of lime juice and mix well to create a vibrant, fresh topping.
  5. Once the mussels are cool enough to handle, remove the top shell of each mussel, leaving the meat attached to the bottom shell. Arrange them on a serving platter, shell side down.
  6. Spoon the fresh onion-tomato mixture generously over each mussel, ensuring each one is well-covered with the topping. Sprinkle fine sea salt to taste over the prepared mussels, enhancing the flavors of the fresh ingredients.
  7. Serve the Choritos a la Chalaca immediately, allowing the bright, tangy flavors to shine. This dish is best enjoyed fresh, with the mussels still slightly warm and the topping crisp and zesty.
