Feta Psiti me Meli hails from the sun-dappled terraces of Greek tavernas, where the simplicity of ingredients speaks volumes. In homes across Greece, it is a staple of casual gatherings, brought to life with olive oil poured freely and salt measured with instinct.

Expect a harmonious blend of flavors that dance across your palate. The creamy feta is warmed through, draped in golden honey that lends a sweet contrast. A sprinkle of sesame seeds and dried oregano adds a nutty, herbal finish, while a drizzle of olive oil ties it all together with a luscious sheen.

Ingredients

  • 300 gfeta — in a block
  • 2 tbsphoney
  • 1 tspsesame seeds
  • 1 tspdried oregano
  • 2 tbspolive oil
  • to tastefine sea salt

Method

  1. Preheat your oven to 200°C (390°F) to ensure it's ready for baking. While the oven heats, take the 300 g block of feta and gently pat it dry with a paper towel. This helps remove excess moisture, allowing the cheese to bake properly and develop a nice crust.
  2. Place the feta in a small ovenproof dish or a piece of parchment paper on a baking tray. Drizzle 2 tbsp of olive oil over the feta, ensuring it is evenly coated. This will help the cheese become golden and slightly crispy as it bakes.
  3. Sprinkle 1 tsp of dried oregano evenly over the feta. The oregano will infuse the cheese with its earthy aroma, enhancing the overall flavor of the dish.
  4. Drizzle 2 tbsp of honey over the feta, allowing it to coat the top and sides. The honey will caramelize in the oven, creating a sweet contrast to the salty feta.
  5. Sprinkle 1 tsp of sesame seeds over the honey-coated feta. The sesame seeds will toast during baking, adding a nutty flavor and a slight crunch to the dish.
  6. Place the dish in the preheated oven and bake for about 10-15 minutes. You'll know it's done when the feta is golden brown on top and slightly bubbling at the edges.
  7. Once baked, remove the feta from the oven and let it cool for a minute. Finish with a light sprinkle of fine sea salt to taste, which will enhance the flavors without overpowering the dish.
  8. Serve the Feta Psiti me Meli immediately while it's warm, allowing the flavors of the honey, oregano, and sesame to meld with the creamy texture of the baked feta.
