Kibbeh Nayyeh captures the essence of Lebanese mountain mezze, where the art of seasoning is guided by tradition rather than measurements. Expect a plate that balances the pure, clean taste of lean lamb with the nutty undertone of fine bulgur. Ingredients

  • 500 glean lamb — twice ground
  • 150 gfine bulgur — soaked
  • 1onion — grated
  • 2 tbspolive oil
  • 1 tspbaharat
  • to tastefine sea salt

Method

  1. Rinse 150 g of fine bulgur under cold water until the water runs clear. Drain it well by pressing it gently in a sieve to remove excess water. This ensures the bulgur is not too wet, which would affect the texture of the Kibbeh Nayyeh.
  2. Peel and finely chop 1 onion. Place the chopped onion in a food processor and pulse until it becomes a fine paste. This helps to evenly distribute the onion flavor throughout the dish.
  3. In a large mixing bowl, combine the drained bulgur, onion paste, and 500 g of lean lamb. Use your hands to mix the ingredients thoroughly, ensuring the bulgur and onion are evenly incorporated into the meat.
  4. Add 1 tsp of baharat and 2 tbsp of olive oil to the meat mixture. Continue mixing with your hands until the spices and oil are well blended into the mixture. The baharat will infuse the meat with a warm, aromatic flavor, while the olive oil adds moisture and richness.
  5. Taste the mixture and add fine sea salt to taste. Start with a small amount and adjust as needed, mixing well after each addition. The salt should enhance the flavors without overpowering them.
  6. Transfer the Kibbeh Nayyeh mixture to a serving platter. Use the back of a spoon to smooth the surface and create a slight indentation in the center. This traditional presentation makes it easy for everyone to share and enjoy.
  7. Serve the Kibbeh Nayyeh immediately, garnished with a drizzle of olive oil if desired. The dish should have a smooth, cohesive texture with a balanced blend of flavors, ready to be enjoyed as part of a mezze spread.
