Obatzda is a Bavarian classic, an embodiment of regional comfort served at beer gardens and family tables alike. This spreadable cheese dish finds its roots in the heart of Bavaria, where it's traditionally enjoyed as part of a Brotzeit, a hearty snack enjoyed at midday or in the late afternoon. The tradition of combining cheese and beer into a creamy blend speaks to the local culinary ingenuity and love for rich, satisfying flavors.

The taste of Obatzda is a harmonious blend of ripe Camembert and cream cheese, enriched with the buttery smoothness and a hint of sweet paprika. The subtle crunch of finely chopped onion and the warmth of caraway seeds add depth, while a splash of wheat beer ties everything together with a mild, yeasty tang. Seasoned to taste with fine sea salt and black pepper, Obatzda should be creamy and flavorful, ready to be scooped onto a slice of rustic bread.

Ingredients

  • 250 gripe Camembert — mashed
  • 100 gcream cheese
  • 2 tbspbutter — softened
  • 1small onion — finely grated
  • 1 tspsweet paprika
  • 1 tspcaraway seeds
  • 2 tbspwheat beer — optional
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing all the ingredients to ensure a smooth process. Dice 1 small onion finely and set aside. Cut 250 g of ripe Camembert into small cubes, allowing it to come to room temperature for easier mixing. Measure out 100 g of cream cheese and 2 tbsp of butter, letting them soften at room temperature as well.
  2. In a medium mixing bowl, combine the softened Camembert, cream cheese, and butter. Use a fork to mash and blend these ingredients together until you achieve a smooth, creamy consistency. The mixture should be well-integrated with no large lumps of cheese remaining.
  3. Add the diced onion to the cheese mixture, stirring it in thoroughly. The onion should be evenly distributed throughout the mixture, providing a hint of sharpness in each bite.
  4. Sprinkle in 1 tsp of sweet paprika and 1 tsp of caraway seeds. Mix these spices into the cheese blend until the color is uniform, with the paprika imparting a warm, orange hue and the caraway seeds adding a subtle, aromatic note.
  5. Pour in 2 tbsp of wheat beer, stirring gently to incorporate it into the mixture. The beer should add a slight tang and help achieve a spreadable texture. The mixture should be creamy and slightly fluffy, with no excess liquid pooling.
  6. Taste the Obatzda and season with fine sea salt and black pepper to your preference. The flavors should be balanced, with the salt enhancing the cheese's richness and the pepper adding a mild kick.
  7. Transfer the Obatzda to a serving dish and garnish with a light sprinkle of additional paprika for color, if desired. Serve immediately with fresh bread or Brezeln, enjoying the creamy, flavorful spread as part of a traditional Bavarian snack.
