Pan con Tomate

Pan con Tomate, a staple of Catalan breakfast boards, captures the essence of the Mediterranean with its simplicity and robust flavors. Traditionally enjoyed in the morning, this dish exemplifies the effortless generosity of regional cuisine, where fresh ingredients shine without the need for embellishment. Whether at a bustling cafe or a quiet home table, it brings the sea and garden to your plate with every bite.

Expect a satisfying crunch from the toasted country bread, complemented by the juicy sweetness of ripe tomatoes. The garlic adds a gentle heat, while a drizzle of extra virgin olive oil enhances the flavors, creating a harmonious balance. A sprinkle of fine sea salt ties it all together, making each bite a celebration of straightforward, yet unforgettable taste.

Ingredients

  • 4 slicescountry bread
  • 2ripe tomatoes
  • 2 clovesgarlic
  • 4 tbspextra virgin olive oil
  • to tastefine sea salt

Method

  1. Start by preparing the tomatoes. Cut the tomatoes in half horizontally. Using the large holes of a box grater, grate the cut side of each tomato into a bowl, discarding the skins. This will create a fresh, pulpy tomato mixture that is the base of your Pan con Tomate.
  2. Next, prepare the garlic. Peel the garlic cloves and cut off the ends. Slice each clove in half lengthwise, exposing the inner flesh. This will make it easier to rub onto the bread later, imparting a subtle, aromatic flavor.
  3. Prepare the bread by slicing 4 pieces of country bread, about 1/2-inch thick each. Use a grill pan or skillet and heat it over medium-high heat. Once hot, place the bread slices on the pan and toast them until they are golden brown and have visible grill marks, which should take a few minutes on each side.
  4. Once the bread is toasted, remove it from the pan and immediately rub the cut side of the garlic over the surface of each slice. The warmth of the bread will help release the garlic's oils, infusing the bread with its flavor.
  5. Drizzle each slice of bread with 1 tablespoon of extra virgin olive oil. The oil should soak into the bread slightly, adding richness and a fruity aroma that complements the tomatoes.
  6. Spoon the grated tomato mixture generously over each slice of bread. Spread it evenly, ensuring the bread is well-covered. The tomato should be juicy and vibrant, adding a fresh, garden-like taste to the dish.
  7. Finish by sprinkling fine sea salt over the top of the tomatoes to taste. This will enhance the natural sweetness of the tomatoes and balance the flavors. Serve the Pan con Tomate immediately, enjoying the combination of crispy bread, aromatic garlic, and fresh tomatoes.
