Papdi Chaat

Serves 4 to 6 vegetarian

Papdi Chaat

Papdi Chaat is a beloved street food staple from Delhi, enjoyed in bustling markets and quiet home kitchens alike. It's a dish that brings together the crisp, fried papdi with a medley of flavors that are both refreshing and satisfyingly rich. Traditionally, this chaat is prepared with a keen eye for balance, the salt measured by instinct and the fat added without hesitation, ensuring a taste that lingers.

The essence of Papdi Chaat lies in its vibrant contrast of textures and flavors. Crisp papdis are layered with soft, boiled potatoes and creamy yogurt, all enlivened by the tangy sweetness of tamarind chutney and the fresh zing of mint chutney. A sprinkle of chaat masala and a handful of crunchy sev complete the dish, creating a symphony that's both spicy and cooling, meant to be shared and savored on the table.

Ingredients

  • 24papdi
  • 2potatoes — boiled
  • 150 gyogurt
  • 4 tbsptamarind chutney
  • 4 tbspmint chutney
  • 2 tbspsev
  • 1 tspchaat masala
  • to tastefine sea salt

Method

  1. Begin by boiling the 2 potatoes. Place them in a saucepan, cover with water, and bring to a boil over medium-high heat. Cook until the potatoes are tender and a fork can easily pierce through them, about 15-20 minutes. Drain the water and let the potatoes cool slightly before peeling and dicing them into small cubes.
  2. While the potatoes are boiling, prepare the yogurt by whisking 150 g of yogurt in a bowl until smooth and creamy. This will ensure an even coating on the papdi later. Add a pinch of fine sea salt to the yogurt to enhance its flavor.
  3. Lay out the 24 papdi on a large serving platter or tray. Ensure they are spread out evenly to allow for easy topping and serving. The papdi should be crisp and ready to hold the toppings without becoming soggy.
  4. Once the potatoes are diced, distribute them evenly over the papdi. This provides a hearty base for the chaat and ensures each bite has a bit of potato.
  5. Drizzle 4 tbsp of tamarind chutney over the potatoes and papdi. The tamarind chutney should be tangy and slightly sweet, adding depth to the dish. Follow with 4 tbsp of mint chutney, which brings a fresh, herbal note to balance the flavors.
  6. Spoon the whisked yogurt generously over the papdi, potatoes, and chutneys. The yogurt should cover the toppings but not drown them, providing a creamy texture that complements the crisp papdi.
  7. Sprinkle 2 tbsp of sev over the top. The sev adds a crunchy texture and a slight saltiness, enhancing the overall experience of the chaat.
  8. Finally, dust 1 tsp of chaat masala evenly over the assembled chaat. This spice blend is crucial for the authentic flavor, providing a tangy, spicy kick. Taste and adjust with more fine sea salt if needed.
  9. Serve the Papdi Chaat immediately to enjoy the contrast of textures and flavors. The papdi should remain crisp, and the toppings should be fresh and vibrant.
