Ingredients

Method

  1. Start by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure your fritters are crispy and not soggy.
  2. In a large mixing bowl, beat 2 eggs until they are well combined. Add the grated and dried zucchini to the eggs, then sprinkle in 4 tablespoons of flour. Mix everything together until you have a thick batter. Season the mixture with fine sea salt and black pepper to taste, ensuring the seasoning is evenly distributed.
  3. Chop a handful of fresh herbs such as cilantro or parsley and add them to the batter. Stir well to incorporate the herbs, which will add a fresh, aromatic flavor to the fritters.
  4. Heat a generous amount of oil in a large frying pan over medium-high heat. You want enough oil to cover the bottom of the pan to ensure even frying. Test the oil by dropping a small amount of batter into the pan; it should sizzle immediately.
