Peruvian Stuffed Vegetables 3

Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Wash the peppers or tomatoes and cut off the tops. Scoop out the seeds and any inner membranes. Set them aside.
  2. Rinse the rice under cold water until the water runs clear. Finely chop the onion.
  3. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until it becomes translucent.
  4. Stir in the rice and cook for a few minutes, allowing it to absorb the oil and onion flavors.
  5. Add your choice of herbs, stirring them into the rice mixture. Season with fine sea salt and black pepper to taste.
  6. Stuff the prepared peppers or tomatoes with the rice mixture, packing it in gently.
  7. Place the stuffed vegetables in a baking dish. Drizzle with a little more olive oil.
  8. Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes, or until the vegetables are tender.
  9. Remove from the oven, sprinkle with additional salt if needed, and serve immediately.
