Stuffed Sardines

Hailing from the coastal town of Essaouira, stuffed sardines are a beloved street food, celebrated for their simplicity and vibrant flavors. Typically enjoyed as a snack or light meal, these sardines reflect the region's reliance on the bounty of the Atlantic. The dish captures the essence of casual dining, often shared among friends by the seaside, where the fresh catch is brought in daily.

Each bite of these stuffed sardines offers a delightful contrast: the crispy exterior gives way to tender fish, with the chermoula providing a burst of herbaceous zest. They are best savored with a squeeze of lemon, adding a tangy brightness that complements the rich, savory flavors. This is Essaouira on a plate—simple, fresh, and utterly satisfying.

Ingredients

  • 12fresh sardines, butterflied
  • 4 tbspchermoula
  • 1/2 cupflour, for dusting — optional
  • for fryingoil
  • 1lemon, cut into wedges
  • 1 tspsalt

Method

  1. Lay out the 12 butterflied sardines on a clean surface, skin side down. Spread 1 teaspoon of chermoula evenly over the flesh of 6 sardines, ensuring each is well-coated with the vibrant marinade. The chermoula should be thick enough to cling to the fish, infusing it with its robust flavors.
  2. Place the remaining 6 sardines on top of the chermoula-coated ones, skin side up, creating a sandwich. Gently press them together to ensure they hold their shape. This step locks in the marinade and allows the flavors to meld during cooking.
  3. Sprinkle 1 teaspoon of salt evenly over both sides of the sardine sandwiches. This will enhance the natural flavors of the fish and the chermoula.
  4. Pour enough frying oil into a large skillet to cover the bottom and heat it over medium-high heat. The oil is ready when a small pinch of flour sizzles upon contact.
  5. Lightly dust each sardine sandwich with flour, shaking off any excess. Carefully place them into the hot oil, ensuring they are not overcrowded. Fry for 2 to 3 minutes on one side until the skin is golden and crisp.
  6. Using a spatula, gently flip each sardine sandwich. Cook for another 2 to 3 minutes on the other side. The sardines are done when the flesh is opaque and the skin is crispy and golden brown.
  7. Remove the sardines from the skillet and drain on a paper towel-lined plate to absorb any excess oil. This step keeps them crispy.
  8. Serve the stuffed sardines immediately with lemon wedges on the side. The lemon's acidity will brighten the dish, complementing the rich flavors of the sardines and chermoula.
