Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by cutting the 600 g of lamb into even-sized cubes, approximately 2.5 cm each. This ensures they cook evenly. Peel and finely chop the onion, which will be used to infuse the lamb with flavor.
  2. In a large mixing bowl, combine the lamb cubes with the chopped onion, 2 tbsp of olive oil, and 1 tsp of cumin. Use your hands to mix everything thoroughly, ensuring each piece of lamb is well-coated with the oil and spices. This step is crucial for building the base flavor of the skewers.
  3. Season the lamb mixture generously with fine sea salt and black pepper to taste. Toss the mixture again to distribute the seasoning evenly. The salt will help to tenderize the meat and enhance its natural flavors.
  4. Thread the seasoned lamb cubes onto skewers, leaving a small gap between each piece to allow for even cooking. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  5. Preheat your grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. Cook the lamb for about 3-4 minutes on each side, turning occasionally. Look for a nicely charred exterior and a juicy interior. The lamb should be slightly firm to the touch and have a rich, aromatic smell.
  6. Once the lamb is cooked to your liking, remove the skewers from the grill. Let them rest for a minute to allow the juices to redistribute. Serve the skewers immediately, ensuring the table is set for sharing, as is traditional in Thai home cooking.
