  1. Begin by cutting the 600 g of lamb into uniform cubes, roughly 2 inches each, to ensure even cooking. Peel and finely chop the onion, as this will help it integrate smoothly into the marinade and enhance the flavor of the lamb.
  2. In a large mixing bowl, combine the lamb cubes and chopped onion. Add 2 tablespoons of olive oil, 1 teaspoon of cumin, and a generous pinch of fine sea salt and black pepper. Mix everything thoroughly with your hands, ensuring each piece of lamb is well-coated with the oil and spices. This step is crucial for building a deep, aromatic flavor profile.
  3. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to allow heat to circulate evenly. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  4. Preheat your grill to medium-high heat. Once hot, place the skewers on the grill. Cook the lamb for about 4-5 minutes on each side, turning occasionally. Look for a nice char on the outside and a juicy, slightly pink center, indicating the lamb is cooked to perfection.
