Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by cutting the 600 g of lamb into uniform cubes, about 2.5 cm each, to ensure even cooking. Peel and finely chop the onion, as it will be used to marinate the lamb and impart flavor.
  2. In a large mixing bowl, combine the lamb cubes and chopped onion. Add 2 tbsp of olive oil, 1 tsp of cumin, and a generous pinch of fine sea salt and black pepper. Mix thoroughly with your hands to ensure each piece of lamb is well-coated with the marinade.
  3. Cover the bowl with plastic wrap and let the lamb marinate in the refrigerator for at least 30 minutes. This allows the flavors to penetrate the meat, enhancing its taste.
  4. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to allow for even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  5. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. Cook the lamb for about 3-4 minutes on each side, turning occasionally, until the meat develops a rich brown crust and is cooked to your desired level of doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes. This resting period allows the juices to redistribute within the meat, ensuring tenderness.
  7. Finish by sprinkling a final touch of fine sea salt over the skewers to enhance the flavors. Serve the skewers immediately, encouraging everyone to share and enjoy this Vietnamese home-cooked dish.
