Caldo de Cana

Serves 4 to 6 vegan

Caldo de Cana

Caldo de Cana, a cherished Brazilian beverage, traces its roots to the bustling street mills where the aroma of freshly pressed sugarcane fills the air. Traditionally, it's enjoyed on hot afternoons or as a refreshing pause during market visits, offering a sweet escape from the tropical sun. This home version captures the essence of those vibrant stalls, bringing the lively spirit of Brazilian street culture into your kitchen.

The drink itself is a symphony of refreshing sweetness and a subtle zing. The sugarcane's natural sweetness is heightened by a squeeze of lime, while a whisper of ginger adds warmth. A delicate sprinkle of sea salt balances the flavors, creating a beverage that's both invigorating and satisfying. Serve over ice for a refreshingly cool experience that transports you straight to Brazil's sun-drenched streets.

Ingredients

  • 4stalks of sugarcane — juiced
  • 1lime
  • as neededice
  • 1 pinchginger — optional
  • to tastefine sea salt — a drop

Method

  1. Begin by preparing the sugarcane. Peel the outer layer of the 4 stalks of sugarcane using a sharp knife, ensuring you remove the tough skin completely to expose the juicy interior. Cut the peeled sugarcane into smaller pieces that will fit into your juicer or blender.
  2. Juice the sugarcane. If you have a sugarcane juicer, feed the pieces through the machine to extract the juice. If using a blender, add the sugarcane pieces with a small amount of water to help blend, then strain the mixture through a fine sieve or cheesecloth to separate the juice from the pulp.
  3. Chill the sugarcane juice. Pour the extracted juice into a pitcher and place it in the refrigerator to cool. This chilling process is essential to bring out the refreshing qualities of the Caldo de Cana.
  4. While the juice is chilling, prepare the lime. Roll 1 lime on the countertop with your palm to loosen the juices, then cut it in half and squeeze the juice into a small bowl. Remove any seeds to ensure a smooth texture.
  5. Once the sugarcane juice is sufficiently chilled, remove it from the refrigerator. Add the lime juice to the pitcher, stirring gently to combine. This step enhances the flavor without overpowering the natural sweetness of the sugarcane.
  6. Add a pinch of ginger to the mixture. Stir gently to incorporate, allowing the subtle spice to infuse without dominating the drink. Taste the mixture and add fine sea salt to taste, balancing the sweetness with a hint of savory.
  7. Prepare to serve the Caldo de Cana. Fill serving glasses with ice to keep the drink cold and refreshing. Pour the prepared juice over the ice, ensuring each glass gets an even distribution of the flavors.
  8. Serve immediately in traditional glassware to maintain the chilled temperature and optimal flavor. Enjoy the Caldo de Cana as a refreshing, sweet treat that embodies the essence of Brazilian street food culture.
