Chilcano

Chilcano is the quintessential Peruvian cocktail, a staple in casual gatherings and lively celebrations alike. Rooted in the vibrant bar culture of Lima, it's a drink that captures the spirit of sharing and spontaneity. Traditionally, its preparation is an art of instinct—a dash of salt, a splash of pisco, and a generous pour of ginger ale, all balanced by the hand and eye of the maker. This recipe brings that authentic experience to your home, allowing you to recreate the convivial atmosphere of Peruvian get-togethers.

Expect a refreshing burst of flavors, where the crisp zing of lime dances with the effervescent ginger ale, all anchored by the smooth, robust notes of pisco. The dash of bitters adds a final, subtle complexity, making each sip an invitation to savor and linger. Serve it chilled over ice, and let it transport you to a sun-drenched terrace, where laughter and stories flow as freely as the drink itself.

Ingredients

  • 60 mlpisco
  • 150 mlginger ale
  • 1lime
  • as neededice
  • 3 dropsbitters

Method

  1. Start by chilling a highball glass in the freezer for about 10 minutes to ensure your Chilcano stays refreshingly cold. If you prefer, you can fill the glass with ice and water to chill it while you prepare the other ingredients, then discard the ice water before assembling the drink.
  2. Cut the lime in half and squeeze the juice from one half into a small measuring cup, aiming for about 15 ml of fresh lime juice. This will provide the essential citrus balance to the drink. Reserve the other half for garnish or additional lime juice if desired.
  3. Measure 60 ml of pisco using a jigger or a small measuring cup. Pour the pisco into the chilled highball glass, ensuring the glass is free of any residual ice water if you used that method to chill it.
  4. Add the freshly squeezed lime juice to the glass with the pisco. This combination is the heart of the Chilcano, providing both flavor and aroma.
  5. Carefully measure 150 ml of ginger ale and pour it gently into the glass. Pouring slowly helps to maintain the carbonation, which is crucial for the drink's light and refreshing character.
  6. Add as much ice as needed to fill the glass, leaving a little room at the top to prevent overflow. The ice will help keep the drink cold and slightly dilute the pisco, balancing the flavors.
  7. Finish by adding 3 drops of bitters to the surface of the drink. The bitters add a subtle depth and complexity to the flavor profile.
  8. Stir the drink gently with a cocktail stirrer or a long spoon to combine the ingredients without losing too much carbonation. Serve immediately in the chilled highball glass to enjoy the Chilcano at its best.
