Ingredients

Method

  1. Start by bringing 500 ml of water to a boil in a medium-sized saucepan. Use a saucepan rather than a kettle to allow for better infusion of spices later on. Once the water reaches a rolling boil, reduce the heat to low to maintain a gentle simmer.
  2. Add 2 tablespoons of tea leaves directly into the simmering water. Stir gently to ensure the leaves are fully submerged and begin to release their flavor. Allow the tea to steep for about 3 to 5 minutes, until the water takes on a rich, deep color and the aroma of the tea is pronounced.
  3. As the tea steeps, add your choice of spices to taste. Common choices include cinnamon sticks, cloves, or star anise. Add these spices directly to the saucepan, allowing them to infuse their flavors into the tea. Stir occasionally to help the spices release their essential oils into the liquid.
  4. Taste the tea and add sugar to your liking, stirring until it dissolves completely. The sugar should balance the bitterness of the tea and the warmth of the spices, creating a harmonious blend of flavors. Adjust the sweetness gradually to avoid overpowering the spices.
  5. Once the tea has reached your desired flavor profile, strain it through a fine mesh sieve into a teapot or directly into serving glasses. This will remove the tea leaves and spices, leaving you with a smooth, spiced tea.
