Vinho Verde Fresco

Vinho Verde Fresco hails from the lush, verdant Minho region in northern Portugal, where the rolling hills are as lively as the wine itself. This refreshing concoction is less about formality and more about the freedom of generous olive oil and intuitive salting, reflecting the unpretentious spirit of a Portuguese family kitchen. Crafted without ceremony, it’s a celebration of simplicity, enjoyed whenever the sun drapes its warmth over the afternoon or when friends gather without agenda.

Vinho Verde Fresco offers a crisp, invigorating taste with citrus notes from fresh lemons and a sparkling water zest, evoking the breezy vineyards of its origin. Serve chilled, keeping ice in the bucket to preserve its effervescent charm.

Ingredients

  • 1 bottleVinho Verde — 750 ml, chilled to 8°C
  • 1lemon — cut into wide strips of peel
  • ice cubesfor the bucket, not the glass
  • 500 mlsparkling water — for a lighter pour

Method

  1. Start by chilling the bottle of Vinho Verde in the refrigerator for at least a few hours until it is thoroughly cold. This ensures the wine is refreshing and crisp when served, which is essential for Vinho Verde Fresco.
  2. Once the wine is chilled, prepare a large serving pitcher. Pour the entire bottle of cold Vinho Verde into the pitcher. This will be the base of your drink and should remain cold throughout the preparation.
  3. Slice the lemon in half and squeeze the juice from both halves directly into the pitcher with the wine. The lemon juice adds a bright, citrusy note that complements the wine's natural acidity.
  4. Add 500 ml of sparkling water to the pitcher. This will enhance the effervescence of the Vinho Verde, making the drink light and refreshing. Stir gently to combine the liquids without losing too much of the carbonation.
  5. Fill a large ice bucket with ice cubes. Do not add ice directly to the pitcher, as this would dilute the drink too quickly. Instead, the ice bucket will keep the pitcher cold while serving.
  6. Allow the mixture to rest for a few minutes to let the flavors meld together. Taste the drink and adjust with more lemon juice if you prefer a tarter flavor, or add a touch of sugar if a sweeter profile is desired, stirring until dissolved.
  7. To serve, pour the Vinho Verde Fresco into individual glasses from the pitcher, ensuring each glass receives a balanced mix of wine and sparkling water. Serve immediately while the drink is still cold and effervescent, enjoying the refreshing taste that is characteristic of this Portuguese classic.
