Ingredients

  • 500 gflour
  • 7 gyeast
  • 300 mlwater
  • 2 tbspsesame seeds
  • 1 tspfine sea salt

Method

  1. In a large mixing bowl, combine 500 g of flour, 7 g of yeast, and 1 tsp of fine sea salt. Gradually add 300 ml of water, mixing with your hands or a wooden spoon until a shaggy dough forms. Transfer the dough onto a lightly floured surface.
  2. Knead the dough by pushing it away from you with the heel of your hand, then folding it back over itself. Continue this motion for about 10 minutes, until the dough becomes smooth and elastic. You'll know it's ready when it springs back slightly when pressed with a finger.
  3. Place the kneaded dough back into the bowl and cover it with a damp cloth. Allow it to rise in a warm, draft-free area until it doubles in size. This should take about 1 to 2 hours, depending on the room temperature.
  4. Once the dough has risen, gently deflate it by pressing down with your hands. Shape it into a loaf by folding the edges into the center, then turn it seam-side down. Lightly grease a baking sheet and place the loaf on it.
  5. Preheat your oven to 220°C (428°F). While the oven heats, brush the surface of the loaf with water and sprinkle 2 tbsp of sesame seeds evenly over the top. This will give the crust a nutty flavor and a crunchy texture.
  6. Bake the loaf in the preheated oven for about 25 to 30 minutes, or until the crust is golden brown and it sounds hollow when tapped on the bottom. The sesame seeds should be toasted and fragrant, indicating doneness.
  7. Remove the loaf from the oven and immediately transfer it to a wire rack. Allow it to cool completely so the crumb sets properly, which will ensure a better texture when sliced.
  8. Once cooled, slice the Brasileiro Seed Loaf and serve it warm with your meal. The loaf's soft interior and crunchy crust make it perfect for sharing at the table.
