The taste is a harmonious blend of natural sweetness from the dates, with a subtle crunch from walnuts or the smooth nuttiness of sesame, all bound together by the gentle touch of honey. This confection is celebrated for its uncomplicated yet satisfying texture, offering a delightful bite that is both soft and slightly chewy.

Ingredients

  • 2 cupspitted dates
  • 1/2 cupwalnuts or sesame — optional
  • 1 tbsphoney

Method

  1. Begin by placing 2 cups of pitted dates in a medium saucepan. Add just enough water to cover the dates, which will help soften them as they cook. Turn the heat to medium-low, allowing the dates to gently simmer. Stir occasionally until the dates break down into a thick, smooth paste, which should take on a rich, dark brown color and emit a sweet, caramel-like aroma.
  2. While the dates are cooking, prepare the nuts. If using walnuts, chop 1/2 cup into small pieces. If using sesame seeds, measure out 1/2 cup. Toast the walnuts or sesame seeds in a dry skillet over medium heat, stirring frequently, until they are golden and fragrant. This step enhances the nutty flavor and adds a pleasant crunch to the sweets.
  3. Once the date paste has reached the desired consistency, remove the saucepan from the heat. Stir in the toasted walnuts or sesame seeds, ensuring they are evenly distributed throughout the mixture. The paste should be thick enough to hold its shape but still pliable.
  4. Transfer the date and nut mixture into a shallow dish or onto a piece of parchment paper. Press it down evenly with a spatula or your hands, forming a compact layer. Allow it to cool slightly, which will help it set and make it easier to cut.
  5. Drizzle 1 tablespoon of honey over the top of the date paste, spreading it gently with the back of a spoon to create a thin, glossy layer. This adds a touch of floral sweetness and a beautiful sheen to the finished sweets.
  6. Once the mixture has cooled to room temperature, cut it into small squares or diamond shapes. Serve the Date Paste Sweets warm or at room temperature, allowing their inviting aroma to draw everyone to the table.
