Mazamorra Morada

Mazamorra Morada is a beloved staple in the homes of Lima, often appearing as a comforting dessert at family gatherings or casual weekday meals. Though its roots stretch deep into Peruvian history, it is firmly grounded in the modern kitchen, where the recipe evolves with each cook's personal touch. Traditionally, it is crafted with a generous hand, the salt and fat measured by instinct, ensuring each spoonful carries the warmth of home.

The heart of Mazamorra Morada is its rich, velvety texture, achieved through the careful melding of purple corn and potato starch. Each bite offers a harmonious blend of fruity sweetness and aromatic cinnamon, with dried fruits adding a chewy contrast. This dish is a celebration of contrasts, where the vibrant color and flavors come together in perfect unity, inviting everyone to savor a moment of pure Peruvian delight.

Ingredients

  • 200 gpurple corn
  • 80 gdried fruit
  • 80 gsugar
  • 1 stickcinnamon
  • 2 tbsppotato starch

Method

  1. Begin by preparing the base for the Mazamorra Morada. In a large pot, combine 200 g of purple corn with 1 stick of cinnamon and 1.5 liters of water. Bring this mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for about 45 minutes. The liquid should turn a deep purple color and become fragrant with the aroma of cinnamon.
  2. While the corn mixture is simmering, prepare the dried fruit. Use 80 g of your choice of dried fruit, such as prunes or apricots. Chop them into small, bite-sized pieces. This will ensure they integrate well into the final dish, providing bursts of sweetness and texture.
  3. After the corn mixture has simmered and the color is rich, strain the liquid into another pot, discarding the solids. Return the strained liquid to the stove and add the chopped dried fruit. Allow it to simmer on low heat for another 15 minutes. The fruit should plump up, absorbing some of the purple liquid.
  4. In a small bowl, dissolve 2 tbsp of potato starch in 1/4 cup of cold water. Stir until smooth to avoid lumps. Gradually add this starch mixture to the simmering pot, stirring constantly. You will notice the liquid begin to thicken and take on a glossy sheen, indicating the starch is activating.
  5. Add 80 g of sugar to the pot and continue stirring. The sugar will dissolve, sweetening the mixture and enhancing the flavors. Taste and adjust the sweetness if necessary, keeping in mind that the dish should be pleasantly sweet but not overpowering.
  6. Once the Mazamorra Morada has thickened to a pudding-like consistency, remove it from the heat. It should be thick enough to coat the back of a spoon. Allow it to cool slightly before serving, as the flavors will develop further as it rests.
  7. Serve the Mazamorra Morada warm or at room temperature. It can be enjoyed on its own or with a sprinkle of cinnamon on top. This dish is perfect for sharing, embodying the communal spirit of Peruvian home cooking.
