Poached Pears with Citrus

Poached Pears with Citrus is a delightful example of how Mediterranean simplicity transforms everyday ingredients into an elegant dessert. This dish is a staple at Mediterranean tables, where olive oil and citrus fruits are as common as the sun-drenched gardens they come from. Crafted for the home kitchen, it captures the essence of the sea-kissed and garden-fresh flavors that define the region's cuisine.

The pears, tender from gentle poaching, absorb the vibrant notes of orange and lemon, while a hint of cinnamon warms the palate. Each spoonful offers a balance of sweetness and citrus tang, evoking a sense of coastal breezes and lush orchards. Serve it chilled or at room temperature, allowing the flavors to dance softly on the tongue, a perfect conclusion to any Mediterranean meal.

Ingredients

  • 4pears
  • 500 mlwater
  • 80 gsugar or honey
  • 1orange
  • 1lemon
  • 1cinnamon stick

Method

  1. Begin by peeling 4 pears, keeping the stems intact for presentation. Cut a small slice off the bottom of each pear so they can stand upright in the pot. This will ensure even poaching and a beautiful presentation when serving.
  2. In a medium-sized pot, combine 500 ml of water and 80 g of sugar or honey. Stir gently over medium heat until the sugar or honey dissolves completely, creating a simple syrup. This will serve as the base for poaching and infusing the pears with flavor.
  3. Zest the orange and lemon, then juice both fruits. Add the zest and juice to the pot along with 1 cinnamon stick. The citrus and cinnamon will infuse the syrup with a warm, aromatic flavor, enhancing the natural sweetness of the pears.
  4. Carefully place the pears upright in the pot, ensuring they are mostly submerged in the liquid. If necessary, add a bit more water to cover the pears. Bring the liquid to a gentle simmer, adjusting the heat as needed to maintain this without boiling.
  5. Poach the pears for approximately 20-30 minutes, turning them occasionally to ensure even cooking. The pears are done when they are tender and can be easily pierced with a knife, yet still hold their shape. The aroma of citrus and cinnamon should be prominent.
  6. Once the pears are tender, remove them from the pot and set them aside on a plate to cool slightly. This resting period allows the flavors to settle and the pears to firm up a bit, making them easier to handle and serve.
  7. Increase the heat under the pot to medium-high and reduce the poaching liquid until it thickens slightly, forming a syrup. This will concentrate the flavors and create a luscious sauce to accompany the pears.
  8. To serve, place each pear on a serving dish and drizzle with the citrus-cinnamon syrup. Optionally, garnish with additional orange or lemon zest for a burst of fresh citrus aroma. Enjoy the poached pears warm or at room temperature, savoring the Mediterranean flavors.
