Suspiro Limeño

Born in the heart of Lima, Suspiro Limeño is a dessert that whispers of indulgent afternoons and family gatherings. Its origins date back to the 19th century, a sweet homage to the city’s romance and culinary prowess. Traditionally served after a leisurely meal, this dish is a staple in Peruvian homes, crafted with the kind of care that reflects a family cook's intuition.

Rich and velvety, Suspiro Limeño envelops the palate with the creamy embrace of condensed and evaporated milk, harmonized by the warmth of cinnamon. Topped with a cloud of meringue, it offers a delightful contrast in texture, a confection that satisfies the sweet tooth with every spoonful. This dessert is not just tasted but felt, each bite a comforting reminder of Lima's sweet legacy.

Ingredients

  • 1 cancondensed milk
  • 1 canevaporated milk
  • 4egg yolks
  • meringueto top
  • 1 pinchcinnamon

Method

  1. Begin by placing 1 can of condensed milk and 1 can of evaporated milk into a medium-sized, heavy-bottomed saucepan. This type of pan will help prevent the milk from scorching. Set the heat to medium-low and stir occasionally with a wooden spoon until the mixture is well combined and begins to gently simmer. This will ensure the sugars in the milk start to caramelize slightly, adding depth to the flavor.
  2. While the milk mixture is heating, separate 4 egg yolks into a small bowl. Once the milk mixture is simmering, remove the saucepan from the heat. Gradually whisk a small amount of the hot milk into the egg yolks to temper them, which prevents curdling when you add them back to the saucepan.
  3. Return the tempered egg yolks to the saucepan with the milk mixture. Place the saucepan back on medium-low heat and stir continuously. Cook until the mixture thickens and coats the back of the spoon, which indicates that the custard is ready. This should have a smooth, velvety texture without any lumps.
  4. Once thickened, remove the saucepan from the heat and let the custard cool slightly. Pour the custard into individual serving glasses or a large serving dish, depending on your preference. Allow it to cool to room temperature before placing it in the refrigerator to chill and set completely.
  5. Prepare the meringue topping by beating egg whites with sugar until stiff peaks form. Spoon or pipe the meringue over the chilled custard, creating a beautiful, fluffy layer. This contrast in texture is a hallmark of Suspiro Limeño.
  6. Finish by sprinkling a pinch of cinnamon over the meringue. This adds a warm, aromatic note that complements the sweetness of the dessert. Serve the Suspiro Limeño chilled, allowing the flavors to meld and the textures to shine.
