Aji Limo Salsa

Serves 4 to 6 vegan, ceviche

Aji Limo Salsa

Aji Limo Salsa is a vibrant staple at ceviche bars along Peru's coast, where it's crafted with instinctive skill—salt seasoned by touch and oil added with a generous hand. This home version captures that same essence, bringing the flavors of the coast to your kitchen, just as a Peruvian family would prepare it for their table. It's a dish that transforms everyday meals into something worth sharing, reminiscent of lively gatherings around bustling cevicherías.

Expect a bright and fiery kick from the four aji limo peppers, balanced by the refreshing tang of freshly squeezed lime juice. The handful of cilantro adds a fragrant, herbal note, while a touch of fine sea salt and a drizzle of oil bring harmony to the salsa's bold flavors. Serve it as a zesty accompaniment to grilled fish or a lively topping for tacos, inviting a taste of Peru into every bite.

Ingredients

  • 4aji limo
  • 2limes
  • 1 handfulcilantro
  • 1 tspfine sea salt
  • 1 tspoil

Method

  1. Begin by preparing the aji limo peppers. Remove the stems and slice each pepper in half lengthwise. Use a spoon to carefully scrape out the seeds and membranes, as these contain most of the heat. Chop the peppers into small pieces, aiming for a fine dice to ensure even blending.
  2. Place the chopped aji limo into a mortar and pestle or a blender. If using a mortar and pestle, pound the peppers until they form a smooth paste. If using a blender, pulse until the mixture reaches a smooth consistency. The paste should be vibrant in color, indicating that the peppers are well-blended.
  3. Slowly incorporate 1 teaspoon of oil into the pepper paste. Add the oil in a thin stream while continuing to blend or pound. This will help emulsify the mixture, giving it a silky texture. The oil should be fully absorbed, and the paste should appear glossy.
  4. Juice the 2 limes and gradually add the juice to the mixture. Stir or blend gently to combine. The acidity of the lime juice will balance the heat of the peppers and enhance the overall flavor. The mixture should have a bright, tangy aroma.
  5. Finely chop a handful of cilantro and add it to the salsa. Stir to incorporate the cilantro evenly throughout the mixture. The cilantro will add a fresh, herbal note that complements the heat of the peppers.
  6. Season the salsa with 1 teaspoon of fine sea salt. Mix thoroughly and taste by spreading a small amount on a piece of bread. Adjust the salt if necessary, ensuring the flavors are well-balanced and the heat is to your liking.
  7. Allow the salsa to rest for a few minutes to let the flavors meld together. Serve the Aji Limo Salsa cool, as a vibrant and spicy accompaniment to your meal, perfect for sharing at the table.
