Alioli

Alioli is a staple in the everyday cuisine of Cataluña and Valencia, where it is crafted with such frequency that the recipe is often committed to memory rather than paper. This traditional emulsion, whipped up with just a handful of ingredients, graces tables on ordinary days, bringing its pungent charm to a variety of dishes.

Expect a bold and creamy concoction where the garlic sings brightly, tempered by the smoothness of mild olive oil and the subtle tang of lemon. This alioli boasts a velvety texture, ideal for drizzling over grilled meats or vegetables, or simply swiped over crusty bread, elevating humble meals to a culinary delight.

Ingredients

  • 6 clovesgarlic — peeled
  • 1 tspcoarse salt
  • 250 mlmild olive oil
  • 1egg yolk — for a stable emulsion
  • 1 tsplemon juice

Method

  1. Peel 6 cloves of garlic and place them in a mortar. Add 1 teaspoon of coarse salt to the garlic. Use a pestle to pound the garlic and salt together until you achieve a smooth paste. The salt helps to break down the garlic fibers, releasing their oils and flavor.
  2. Separate 1 egg yolk from its white and add the yolk to the garlic paste. Stir the mixture gently with the pestle until the yolk is fully incorporated, creating a creamy base. This step is crucial for the emulsion process that will follow.
  3. Begin adding 250 ml of mild olive oil very slowly. Start with just a few drops at a time, stirring constantly with the pestle in a circular motion. As the mixture begins to thicken, you can increase the oil flow to a thin stream. The goal is to achieve a thick, smooth emulsion without the sauce splitting.
  4. Once all the olive oil is incorporated and the sauce has thickened to a mayonnaise-like consistency, add 1 teaspoon of lemon juice. Stir well to combine. The lemon juice brightens the flavor and helps stabilize the emulsion.
  5. Taste the alioli by spreading a small amount on a piece of bread. This method allows you to experience the flavor as it will be served. Adjust the seasoning if necessary, adding a bit more salt or lemon juice to taste.
  6. Let the alioli rest for about half an hour at room temperature. This resting period allows the flavors of the garlic to mellow and blend with the olive oil. Serve the alioli with fresh bread, boiled potatoes, or grilled vegetables, appreciating the rich, garlicky aroma and creamy texture.
