Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic

Method

  1. Start by preparing the base for the dip. In a mortar and pestle or a food processor, combine 400 g of yogurt with a generous handful of fresh herbs of your choice, such as parsley, cilantro, and chives. Pound or blend until the mixture is smooth and the herbs are finely incorporated, creating a vibrant green color throughout the yogurt.
  2. Slowly incorporate olive oil into the mixture. Drizzle a small amount of olive oil, about 2 tablespoons, into the yogurt and herb mixture while stirring or blending continuously. This will help emulsify the dip, giving it a rich, creamy texture. The mixture should appear slightly glossy and well-combined.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the yogurt mixture, stirring it in thoroughly. Season with fine sea salt to taste, starting with about a half teaspoon. Taste the dip by spreading a small amount on a piece of bread to ensure the salt and garlic flavors are balanced and to your liking.
  4. Allow the dip to rest briefly. Transfer it to a serving bowl and let it sit in the refrigerator for about 10 minutes. This resting period allows the flavors to meld together, enhancing the overall taste of the dip.
  5. Before serving, give the dip a final stir and drizzle a little more olive oil on top for a finishing touch. Serve the dip cool, alongside fresh bread or vegetable sticks, inviting everyone to enjoy this flavorful and creamy Brazilian herb dip.
