Gochujang Dipping Sauce, a staple in Korean homes, carries the essence of traditional condiments crafted in earthenware jars. This sauce is a tribute to the home kitchen, where ingredients are combined with a practiced hand rather than precise measures. It's a common sight on Korean tables, accompanying everything from grilled meats to fresh vegetables, embodying the spirit of communal dining.

With a bold and spicy base from gochujang, the sauce balances its heat with the tang of rice vinegar and the nutty undertones of sesame oil. A touch of sugar rounds out the flavors, creating a harmonious blend that's both vibrant and complex. Ingredients

  • 4 tbspgochujang
  • 1 tbsprice vinegar
  • 1 tbspsesame oil
  • 1 tbspsoy sauce
  • 1 tspsugar
  • to finishtoasted sesame
  • to tastefine sea salt

Method

  1. In a medium mixing bowl, combine 4 tablespoons of gochujang, 1 tablespoon of rice vinegar, and 1 teaspoon of sugar. Use a whisk or a spoon to mix these ingredients together until the sugar is fully dissolved and the mixture is smooth. The gochujang should be evenly distributed, creating a thick, cohesive base for the sauce.
  2. Slowly drizzle in 1 tablespoon of sesame oil while continuously whisking the mixture. This gradual incorporation ensures that the oil emulsifies with the gochujang base, creating a silky texture. Continue whisking until the sauce appears glossy and the oil is fully integrated without any separation.
  3. Add 1 tablespoon of soy sauce to the mixture, stirring it in gently. The soy sauce will deepen the color and add a savory depth to the sauce. Ensure the soy sauce is evenly mixed, resulting in a uniform, rich hue throughout the sauce.
  4. Taste the sauce and add fine sea salt to your preference, keeping in mind that the gochujang and soy sauce already contribute saltiness. If desired, you can also add a hint of garlic by rubbing a cut clove on a piece of bread and tasting the sauce with it. Adjust the seasoning until the balance of sweet, salty, and spicy flavors suits your palate.
  5. Allow the sauce to rest for a few minutes at room temperature. This brief resting period allows the flavors to meld together, enhancing the overall taste. Before serving, give the sauce a final stir and sprinkle with toasted sesame seeds for added texture and a nutty aroma.
  6. Serve the gochujang dipping sauce cool, as a complement to grilled meats, vegetables, or as a flavorful dip for bread. The sauce should have a smooth, thick consistency that clings well to whatever it accompanies, offering a burst of umami and spice with each bite.
