Huancaina Sauce

Serves 4 to 6 vegetarian

Huancaina Sauce

Huancaina Sauce hails from the highlands of Peru, where it graces tables with its vibrant hue and inviting aroma. Traditionally served over boiled potatoes, it is a staple at family gatherings and celebratory meals. This home version captures the essence of how a Peruvian family cook would set it for sharing, with salt judged by hand and a generous touch of fat.

The sauce should be a smooth, creamy blend with the gentle heat of aji amarillo peppers and the tang of queso fresco, balanced by the subtle crunch of crackers. Rich and satisfying, it clings lovingly to each slice of potato, inviting you to savor every bite with its unmistakable warmth and depth.

Ingredients

  • 4aji amarillo
  • 100 gqueso fresco
  • 4crackers
  • 80 mloil
  • to tastefine sea salt

Method

  1. Begin by preparing the aji amarillo. Remove the stems and seeds from 4 aji amarillo peppers. If you prefer a milder sauce, you can also remove the veins. Cut the peppers into smaller pieces to make them easier to blend.
  2. Place the chopped aji amarillo peppers into a blender. Add 100 g of queso fresco and 4 crackers. Blend the mixture until it becomes a smooth paste, ensuring there are no large chunks of pepper or cheese remaining. The texture should be creamy and uniform.
  3. With the blender running on a low setting, slowly drizzle in 80 ml of oil. This gradual incorporation helps emulsify the sauce, giving it a rich and smooth consistency. The sauce should start to thicken and become glossy as the oil is fully integrated.
  4. Taste the sauce and add fine sea salt to your liking. If desired, you can also add a small clove of garlic for extra flavor. Blend again briefly to mix in the salt and garlic, then taste the sauce by spreading a small amount on a piece of bread to ensure the seasoning is balanced.
  5. Once the sauce is seasoned to your taste, let it rest for about 10 minutes at room temperature. This allows the flavors to meld together. Serve the Huancaina Sauce cool, traditionally over boiled potatoes, or as a dip for bread or vegetables.
