The dip offers a creamy, nutty richness from tahini, balanced by the bright zing of lemon and the warmth of cumin. Garlic adds a subtle depth, while fine sea salt is hand-judged to enhance each flavor. This is a dish meant to be shared, inviting everyone to gather around and enjoy its simple, satisfying taste.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water. This will remove any excess salt or preservatives from the canning liquid, ensuring a cleaner flavor for your dip. Transfer the chickpeas to a large mixing bowl or a food processor.
  2. Add 2 tbsp of tahini to the chickpeas. If using a mortar and pestle, begin to pound the mixture until it becomes a thick paste, with the chickpeas mostly broken down but still slightly textured. If using a food processor, pulse until the mixture is smooth but retains some texture.
  3. Slowly incorporate the juice of one lemon into the chickpea mixture. This acid will help balance the richness of the tahini and enhance the overall flavor. If using a food processor, drizzle the lemon juice in while the machine is running to ensure even distribution.
  4. Peel and finely mince 2 cloves of garlic. Add the minced garlic and 1 tsp of cumin to the mixture, blending or stirring until fully combined. The garlic should be evenly distributed, and you should begin to smell its pungent aroma blending with the cumin.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste by spreading a little on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will meld and deepen as the dip rests.
  6. Allow the dip to rest for at least 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, setting it out with bread or vegetables for dipping, and enjoy as part of a shared meal.
