Method

  1. Start by preparing the base for the dip. In a medium mixing bowl, combine 400 g of yogurt with a generous handful of fresh herbs. Use a pestle and mortar to pound the mixture until the herbs are finely integrated into the yogurt, creating a smooth and slightly green-tinted base. If you prefer, you can use a blender for a quicker method, but be careful not to over-blend as the yogurt should remain thick and creamy.
  2. Next, incorporate the olive oil into the yogurt mixture. Slowly drizzle in about 2 tablespoons of olive oil while stirring continuously with a spoon. This gradual incorporation helps the oil emulsify with the yogurt, resulting in a rich and velvety texture. The mixture should appear glossy and well-blended, without any separation of the oil.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the yogurt mixture, stirring well to ensure even distribution. Taste the dip by spreading a small amount on a piece of bread.
