Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil

Method

  1. Begin by placing 3 roasted peppers into a blender or food processor. If you prefer a more traditional method, you can use a mortar and pestle. Blend or pound the peppers until they form a smooth, even paste. The texture should be creamy with no large chunks remaining.
  2. Slowly drizzle in 60 ml of olive oil while continuing to blend or pound the mixture. This gradual incorporation helps emulsify the dip, creating a rich and cohesive texture. Once the oil is fully integrated, add the juice of one lemon, blending or mixing until the acid is evenly distributed throughout the dip.
  3. Peel and finely mince 2 cloves of garlic. Add them to the pepper mixture, stirring to combine. Season with fine sea salt to taste, starting with a small pinch and adjusting as needed. Taste the dip on a piece of bread to ensure the balance of flavors is to your liking.
  4. Allow the dip to rest for a few minutes, which lets the flavors meld together and enhances the overall taste. Serve the dip cool, setting it out as part of a shared table spread, typical of Korean home dining.
