Ocopa

Serves 4 to 6 vegetarian

Ocopa

Ocopa is a treasured dish from the Arequipa region, where it's prepared with a sense of instinct and familiarity. This home-style version captures the essence of how Peruvian families have savored it for generations. It's a communal dish, meant for sharing, with ingredients that reflect the local landscape and culinary wisdom passed down through hands-on experience.

The dish should envelop the palate with a lush, creamy texture, where the earthy tones of huacatay and the subtle heat of aji mirasol blend seamlessly with the richness of peanuts and cheese. Each bite is a harmonious balance, welcoming the bold yet comforting flavors that define this quintessentially Arequipeño creation.

Ingredients

  • 1 handfulhuacatay
  • 4aji mirasol
  • 80 gpeanuts
  • 80 gcheese
  • 4crackers
  • to tastefine sea salt

Method

  1. Begin by preparing the base for the Ocopa. In a blender, combine 1 handful of huacatay, 4 aji mirasol, 80 g of peanuts, 80 g of cheese, and 4 crackers. Blend until the mixture becomes a smooth paste. The texture should be creamy and slightly thick, with no large chunks remaining.
  2. Once the base is smooth, slowly incorporate oil and acid. Gradually add a neutral oil, such as vegetable oil, while the blender is running on low speed. This will help emulsify the sauce, giving it a silky texture. Add a splash of lime juice to bring a subtle acidity that balances the richness.
  3. Season the mixture with fine sea salt and garlic. Add salt to taste, starting with a small pinch and adjusting as needed. For the garlic, finely mince a clove and blend it into the sauce. Taste the sauce on a piece of bread to check for balance; it should be savory with a hint of nuttiness and a slight tang from the lime.
  4. Allow the Ocopa to rest briefly at room temperature. This resting period lets the flavors meld together, enhancing the depth of the sauce. Serve the Ocopa cool, as it is traditionally enjoyed this way, allowing the flavors to be more pronounced and refreshing.
