Raita

Serves 4 to 6 vegetarian, biryani

Raita

In Pakistan, raita is the cooling companion to spicy mains like biryani, offering a refreshing contrast to the richness of the meal. This version follows the tradition of intuitive cooking, where measurements are more about feel than precision, and salt is adjusted by hand. It's a staple at gatherings, where the simplicity of its preparation allows the cook to focus on the main event while still providing a dish that completes the table.

The yogurt base of raita is creamy yet light, with the fresh crunch of cucumber and the aromatic warmth of roasted cumin. Mint infuses a cool, herbaceous note, creating a balance that dances between tangy and soothing. Each spoonful offers a textural delight, perfectly seasoned with fine sea salt. This raita is not just a side dish; it's a bridge between flavors, harmonizing the heat of the main course with its gentle coolness.

Ingredients

  • 300 gyogurt
  • 1cucumber
  • 1/2 tsproasted cumin
  • 1 handfulmint
  • to tastefine sea salt

Method

  1. Peel the cucumber and grate it using the large holes of a box grater. Once grated, gently squeeze the cucumber to remove excess water, ensuring the raita does not become too watery. Set the cucumber aside.
  2. In a medium-sized mixing bowl, add 300 g of yogurt. Use a whisk or a fork to beat the yogurt until it becomes smooth and creamy, ensuring there are no lumps. This will be the base for your raita.
  3. Add the grated cucumber to the yogurt and mix well until the cucumber is evenly distributed throughout the yogurt. This will give the raita a refreshing texture.
  4. Finely chop a handful of mint leaves and add them to the yogurt mixture. Stir gently to combine, allowing the mint to infuse its aroma into the raita.
  5. Sprinkle 1/2 teaspoon of roasted cumin over the mixture. Stir to incorporate the cumin, which will add a warm, earthy flavor to the raita.
  6. Gradually season the raita with fine sea salt, adding a small pinch at a time. Taste the raita by spreading a small amount on a piece of bread to ensure the salt level is to your liking.
  7. Let the raita rest in the refrigerator for about 10 minutes. This brief resting period allows the flavors to meld together, enhancing the overall taste.
  8. Serve the raita cool, as a refreshing accompaniment to your meal, perfect for balancing spicy dishes.
