Remoulade in northern Germany is a staple at fish tables, where its creamy texture and tangy notes complement the fresh catch of the day. Traditionally, this dish is prepared with a no-nonsense approach, using butter or clarified butter without a fuss. Salt is added by feel, and second helpings are encouraged, embodying the unpretentious hospitality typical of the region.

The taste is a harmonious blend of creamy mayonnaise, the acidity of pickles and capers, and the subtle bite of mustard and lemon juice. Fresh parsley adds a touch of herbal brightness, while fine sea salt and black pepper bring it all together. This remoulade pairs perfectly with fish, offering a comforting yet vibrant contrast to the meal.

Ingredients

  • 200 gmayonnaise
  • 2pickles — finely diced
  • 1 tbspcapers — chopped
  • 1 tbspfresh parsley
  • 1 tspmustard
  • 1 tsplemon juice
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the ingredients. Finely chop 2 pickles and 1 tablespoon of fresh parsley. Ensure the pieces are small and uniform to blend well into the sauce, providing a consistent texture and flavor in every bite.
  2. In a medium mixing bowl, combine 200 g of mayonnaise, the chopped pickles, and parsley. Add 1 tablespoon of capers, ensuring they are drained well to avoid excess liquid. Stir these ingredients together gently until the mixture is evenly distributed.
  3. Add 1 teaspoon of mustard to the bowl. This will provide a subtle tanginess and depth to the sauce. Stir until the mustard is fully incorporated, checking that the color is uniform throughout the mixture.
  4. Introduce 1 teaspoon of lemon juice to the mixture. This will brighten the flavors and balance the richness of the mayonnaise. Stir well until the lemon juice is thoroughly mixed in, ensuring no pockets of liquid remain.
  5. Season the remoulade with fine sea salt and black pepper to taste. Start with a small pinch of each, then taste the sauce on a piece of bread to gauge the seasoning. Adjust as necessary, keeping in mind that the flavors will develop further as the sauce rests.
  6. Allow the remoulade to rest for about 15 minutes at room temperature. This resting period allows the flavors of the onion and garlic in the mustard and capers to mellow and meld with the other ingredients, resulting in a more harmonious taste.
  7. Serve the remoulade cool, alongside soft pretzels, fresh bread, or boiled potatoes. The sauce should have a creamy texture with a slight tang and a hint of herbaceousness, complementing the mild flavors of the accompanying dishes.
