Salsa Provenzal

Salsa Provenzal hails from the bustling steakhouses of Argentina, where it stands as a staple accompaniment to both fries and the last juicy bite of a perfectly cooked bife. Known for its simplicity and boldness, it is a culinary whisper louder than chimichurri, asserting itself with the robust flavors of fresh parsley and pungent garlic, all swirled into a silky olive oil base.

This sauce should burst with the fresh, peppery notes of parsley, underscored by the sharp, invigorating bite of garlic. The olive oil acts as a lush vehicle, carrying these flavors across the palate with each dip or swipe. A dash of salt brings everything into harmonious balance, making each mouthful a vivid, lively experience.

Ingredients

  • 1 bunchparsley, minced
  • 6garlic cloves, minced
  • 120 ml (1/2 cup)olive oil

Method

  1. Start by thoroughly washing the parsley under cold running water to remove any dirt or grit. Shake off excess water and pat it dry with a clean kitchen towel. Mince the parsley very finely using a sharp knife, ensuring you have a uniform texture that will blend well with the other ingredients.
  2. Peel the garlic cloves and mince them as finely as possible. The smaller the garlic pieces, the better they will infuse the oil with their flavor. Combine the minced garlic with the parsley in a medium-sized mixing bowl.
  3. Pour 120 ml (1/2 cup) of olive oil over the minced garlic and parsley mixture. Stir gently with a spoon until all the ingredients are well combined. The oil should coat the parsley and garlic evenly, creating a cohesive mixture.
  4. Add salt to taste, starting with a small pinch. Stir the mixture again to ensure the salt is evenly distributed. Taste the salsa; you should be able to taste the garlic prominently, but it should not have a raw, harsh bite.
  5. Allow the salsa to stand for 15 minutes at room temperature. This resting period lets the flavors meld together, softening the raw edge of the garlic and allowing the parsley to infuse the oil.
  6. After resting, taste the salsa again. Adjust the salt if necessary. The garlic should be present but not overpowering, with a balanced flavor profile that complements the parsley and oil.
  7. Serve the Salsa Provenzal with fries, milanesa, or grilled meat. It should be used as a dip or a finishing touch, adding a fresh, aromatic kick to your dish.
