Sauce Gribiche

Sauce Gribiche

Sauce Gribiche finds its roots in the unpretentious charm of French bistro cuisine, where it graces the sauce boards with its inviting aroma and encourages diners to gather around the table. This version honors the straightforward, generous flavors cherished in home kitchens, providing a comforting touch to everyday meals.

The character of Sauce Gribiche is defined by its creamy texture and tangy profile, achieved through the harmonious blend of hard-boiled eggs, piquant cornichons, and briny capers. The addition of Dijon mustard adds a subtle kick, while mayonnaise binds the ingredients into a smooth, luscious sauce. Perfect as a companion to cold meats or steamed vegetables, its flavors are direct and vibrant, much like a family cook's warm welcome.

Ingredients

  • 2hard-boiled eggs — chopped
  • 2 tbspcornichons — minced
  • 1 tbspcapers
  • 1/2 cupmayonnaise
  • 1 tbspDijon mustard

Method

  1. Begin by peeling the 2 hard-boiled eggs. Chop the eggs into small pieces, aiming for a coarse texture that will add body to the sauce. Place the chopped eggs in a medium-sized mixing bowl.
  2. Finely chop 2 tablespoons of cornichons and 1 tablespoon of capers. These should be small enough to distribute evenly throughout the sauce but still provide a pleasant bite. Add them to the bowl with the eggs.
  3. Add 1/2 cup of mayonnaise and 1 tablespoon of Dijon mustard to the bowl. Stir gently with a spatula or a wooden spoon until the mixture is well combined, ensuring the mustard is evenly distributed.
  4. Taste the mixture and adjust the seasoning with salt and freshly ground black pepper to your preference. If you desire a bit more tang, consider adding a squeeze of fresh lemon juice. Mix again to integrate the flavors.
  5. Allow the sauce to rest for about 10 minutes at room temperature. This brief resting period helps the flavors meld together, enhancing the overall taste.
  6. Serve the Sauce Gribiche with crusty bread, a selection of fresh vegetables, or as an accompaniment to cold meats. For an optional finishing touch, drizzle a small amount of olive oil over the top before serving to add a subtle richness.
