The sauce carries a refreshing tang from sour cream and yogurt, rounded out by the gentle bite of mustard and the bright lift of lemon juice. Chives lend their distinctive, mild onion flavor, creating a creamy, herbaceous dressing that pairs effortlessly with boiled potatoes or fish. Ingredients

  • 200 gsour cream
  • 100 gyogurt
  • 1 bunchchives — finely snipped
  • 1 tbsplemon juice
  • 1 tspmustard
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the chives. Rinse the bunch of chives under cold water to remove any dirt. Pat them dry with a clean kitchen towel. Using a sharp knife, finely chop the chives into small pieces, about the size of rice grains, to release their flavor and aroma.
  2. In a medium-sized mixing bowl, combine 200 g sour cream and 100 g yogurt. Use a whisk or a hand blender to mix them together until the texture is smooth and uniform. This will be the base of your Schnittlauchsoße, providing a creamy and tangy foundation.
  3. Add 1 tablespoon of lemon juice and 1 teaspoon of mustard to the bowl. Stir these ingredients into the creamy base until they are fully incorporated. The lemon juice will add a fresh acidity, while the mustard provides a subtle depth of flavor.
  4. Gently fold the chopped chives into the mixture using a spatula. Ensure that the chives are evenly distributed throughout the sauce, giving it a speckled green appearance. This step is crucial for infusing the sauce with the delicate onion-like flavor of the chives.
