Tyrokafteri Mild finds its place in the everyday rhythm of Greek home kitchens, where it’s spread over meze platters and enjoyed as a casual, yet essential, offering. It is not bound by a particular celebration or holiday, but rather graces the table whenever a creamy, tangy bite is desired. This version reflects how Greek families truly prepare it—unmeasured olive oil, a pinch of salt judged by instinct, and a squeeze of lemon always within reach.

The taste is a gentle, harmonious blend of creamy feta and tangy yogurt, with the subtle sweetness of roasted red pepper weaving through. The olive oil adds richness, while the salt brings everything into balance, creating a mild yet flavorful spread. It's a dish that should feel luscious and creamy, inviting your senses to indulge in its smooth, savory charm.

Ingredients

  • 300 gfeta
  • 100 gstrained yogurt
  • 1roasted red pepper
  • 60 mlolive oil
  • to tastefine sea salt

Method

  1. Begin by preparing the base for the Tyrokafteri Mild. In a medium-sized mixing bowl, crumble 300 g of feta cheese using your hands or a fork until it resembles coarse crumbs. Add 100 g of strained yogurt to the bowl. If you have a food processor, you can use it to blend the feta and yogurt until smooth, but a fork will work fine for a more rustic texture.
  2. Next, add the roasted red pepper to the mixture. If using a food processor, blend until the pepper is fully incorporated and the mixture is smooth. If mixing by hand, finely chop the roasted red pepper before adding it to the bowl, then stir until evenly distributed throughout the feta-yogurt base.
  3. Slowly drizzle in 60 ml of olive oil while continuously stirring or blending. This step is crucial for achieving a creamy, emulsified texture. The mixture should start to look glossy and smooth, indicating that the oil is well incorporated.
  4. Taste the mixture and add fine sea salt to your preference. Remember that feta can be quite salty, so add the salt gradually. If desired, you can also add a clove of finely minced garlic at this stage for extra flavor. Taste the mixture on a piece of bread to ensure the seasoning is balanced.
  5. Let the Tyrokafteri Mild rest for about 10 minutes at room temperature. This allows the flavors to meld together. Serve the dip cool with pita bread or fresh vegetables for dipping.
