Baingan Bharta

Serves 4 to 6 vegetarian

Baingan Bharta

Baingan Bharta is a dish deeply rooted in the winter kitchens of Punjab, where the chill in the air demands hearty, warming meals. Traditionally, it is a shared dish, with the salt measured by feel and a generous hand with the oil, making it an emblem of communal dining. This version captures the essence of a family cook's approach, bringing warmth and comfort to the table.

The dish boasts a smoky, rich flavor with a silky texture, thanks to charred eggplants mingling with caramelized onions, ripe tomatoes, and a hint of green chili heat. A sprinkle of fresh cilantro brightens the robust flavors, creating a satisfying balance that invites repeated servings.

Ingredients

  • 2large eggplants
  • 2onions
  • 2tomatoes
  • 2green chilies
  • 1 tspcumin seeds
  • 3 tbspoil
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Begin by roasting the eggplants. Place the 2 large eggplants directly on a gas flame or under a broiler, turning occasionally until the skin is charred and the flesh feels soft when pressed. This should take about 10-15 minutes. Once done, allow them to cool slightly, then peel off the charred skin and mash the flesh with a fork until smooth. Set aside.
  2. Finely chop the 2 onions, 2 tomatoes, and 2 green chilies. Heat 3 tablespoons of oil in a large pan over medium heat. Add 1 teaspoon of cumin seeds and let them sizzle until they turn a shade darker and release their aroma, which should take about 30 seconds.
  3. Add the chopped onions to the pan and sauté them slowly. Stir occasionally until they become golden brown and soft, which will take about 8-10 minutes. This slow cooking develops sweetness in the onions, forming the base of the dish.
  4. Once the onions are ready, add the chopped tomatoes and green chilies to the pan. Cook them together, stirring occasionally, until the tomatoes break down and the oil starts to separate from the mixture, indicating that the tomatoes are fully cooked and integrated into the base.
  5. Add the mashed eggplant to the pan and mix well with the onion-tomato base. Cook this mixture on medium heat, stirring occasionally, until the flavors meld together and the mixture becomes thick and cohesive, about 5-7 minutes. The texture should be creamy, with no excess liquid.
  6. Chop a handful of cilantro and add it to the pan. Stir it in and let the flavors combine for another minute. Taste the dish and adjust the seasoning with fine sea salt to your liking.
  7. Serve the Baingan Bharta warm, garnished with additional cilantro if desired. It's ready to be shared at the table, embodying the warmth and richness of a Punjabi home-cooked meal.
